Chocolate Chip Cookies

Here is a recipe for what many consider to be the best chocolate chip cookies with UK measurements:

Ingredients:

  • 250g unsalted butter, at room temperature
  • 200g granulated sugar
  • 200g light brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 400g plain flour
  • 2 tsp bicarbonate of soda
  • 1 tsp salt
  • 300g chocolate chips

Instructions:

  1. Preheat the oven to 190°C/170°C fan/gas mark 5. Line a baking tray with parchment paper.
  2. In a large mixing bowl, cream together the butter, granulated sugar, and light brown sugar until light and fluffy.
  3. Beat in the eggs, one at a time, followed by the vanilla extract.
  4. In a separate bowl, whisk together the flour, bicarbonate of soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the chocolate chips.
  7. Using a cookie scoop or tablespoon, drop the cookie dough onto the prepared baking tray, leaving about 2 inches of space between each cookie.
  8. Bake for 10-12 minutes, until the edges are golden brown.
  9. Remove from the oven and allow the cookies to cool on the tray for 5 minutes before transferring them to a wire rack to cool completely.
